Manicotti
Crepes
4 eggs
1 tsp salt
2 Tbs mazola oil
2 cups warm milk
2 1/3 cups flour

Beat eggs well in mixer bowl. Add salt, oil, milk and flour. Beat until smooth. fry batter in well oiled 6-7 inch skillet, 2 Tbs at a time. Rotate pan with batter so that pancake cooks evenly. When thick, but not brown, flip and cook on another side. Remove and set on paper towel to cool. Filling
14 oz Ricotta Cheese
3 egg yolks
1/4 cup Romano cheese, grated
1/2 cup mozzarella
1/8 tsp black pepper freshly ground
1/4 cup flat leaf parsley, chopped fine
sprinkle allspice and nutmeg
1/2 box frozen chopped spinach
FIlling
Mix all ingredients together except tomato sauce. Put 1 Tbs filling on each pancake and roll. Put in a pan with sauce on bottom. Pour sauce on top and Romano cheese. Bake 350 for 30-45 minutes.
