Brown Butter Sage

This sauce is simple yet incredibly flavorful.  Have your gnocchi cooking while making this sauce, as it comes together very quickly.  It's also an excellent match with pumpkin ravioli.  Sprinkle the final dish with a little grated Parmesan cheese for added flavor.  

 

Yield:  4 servings

 

1/2 pound (2 sticks) unsalted butter

6 Tbs fresh sage leaves, finely chopped

1 Tbs lemon zest

Kosher salt and freshly ground black pepper to taste

 

Melt butter in a large skillet over medium heat, stirring occasionally, until butter turns golden brown and gives off a nutty aroma, about 3-5 minutes.  Remove skillet from heat and stir in chopped sage and lemon zest.  Taste and season with salt and pepper.  Serve immediately.
