Cinnamon Cream Cheese Roll-Ups

1 large loaf sliced white bread with crust removed

8 oz cream cheese, softened

1 egg yolk

3/4 cup powdered sugar

1 cup sugar

2 tsp cinnamon

3/4 cup melted butter

 

In a mixing bowl, blend cream cheese, powdered sugar, and egg yolk.  Roll out individual slices of bread as flat as possible with a rolling pin.  Put about 1 Tbs of the cream cheese mix on each slice and roll jelly roll style.  Cut each in half.  Roll in melted butter then in cinnamon/sugar mixture.  Place on baking sheet and bake at 350 for 10-12 minutes.  Let cool on pan. 

 

I tried making these with gluten free bread.  It didn't work out so well.  Instead of rolling them, it might be best to layer the slices and cut like you would a layered cake.
