Peanut Butter and Jelly Thumbprints

1 c peanut butter or almond butter

¾ c sugar or sucanat 

1 egg

½ tsp baking soda

1/8 tsp sea salt

¼ c sugar (for rolling the dough balls)

Fruit preserves or jam

 

Makes approximately 15 cookies.

 

1.       Preheat oven to 350.

2.       Mix the first 5 ingredients together.

3.       Using a spoon roll dough into 1” balls. 

4.       Roll the dough balls in the sugar and place them onto an ungreased (or foil-lined) cookie sheet at least an inch apart.

5.       Press your thumb into the center of each cookie about 1/2” in, or about ½ through the dough ball.

6.       Put ½ tsp. fruit jam into the indentation of each cookie.

7.       Bake approximately 15-18 minutes.

8.       Cool several minutes before transferring to a wire cooling rack or they’ll fall apart.
