Pineapple Chicken
6 Tbs vegetable oil
3 lb skinless, boneless chicken breast cut into cubes
1/2 cup flour mixed with 1/2 tsp pepper
2/3 cups low sodium soy sauce
3 green peppers cut into strips
3 onions chopped
2/3 cup crushed pineapple
Heat 3 Tbs oil in large skillet. Coat chicken with flour, shaking off excess. Cook chicken briefly until lightly brown. Do in batches add more oil if needed. Return all chicken to pan, add soy sauce and simmer 10 minutes. Remove chicken. Heat 3 Tbs vegetable oil in same pan and add peppers and onions. Saute 5 minutes. Return chicken to pan and add pineapple. Cover ans simmer until flavors blend, about 10 minutes.
To prepare a head of time, under cook slightly then reheat immediately before serving.
