Jelly Roll
3 eggs
1 cup granulated sugar
1/3 cup water
1 tsp vanilla
1 cup cake flour
1 tsp baking powder
1/4 tsp salt
about 2/3 cups jelly - cherry
Sprinkle with confectioner's sugar
Heat oven to 375. Line 11x15" pan with waxed paper. Grease and flour. In small bowl, beat eggs about 5 minutes or until very thick and lemon colored. Pour eggs into large bowl. Gradually beat in sugar. ON low speed, blend in water and vanilla. Gradually add flour, baking powder, and salt. Beat just until batter is smooth. Pour into pan, spreading batter to corners. Bake 12-15 minutes or until tooth pick comes out clean. Turn cake our on towel sprinkled with powdered sugar. Remove wax paper. Roll cake and towel from narrow end. Cool on wire rack. Unroll and spread with jelly, slightly beaten. Re-roll and sprinkle with powdered sugar.
