Aple Cinnamon Snack Cake

2 cups Almond flour

8 Medjool dates

3/4 cup Applesauce

1 tsp Baking soda

1 tsp Cinnamon

1/4 tsp Salt

2 Eggs

1/3 cup Walnuts, chopped
Soak dates in water for 30 minutes, drain.
Preheat oven to 350 degrees. Place dates in the bowl of a food processor, pulse until broken down.
Add applesauce and whirl until it makes a thick paste. In a large mixing bowl, combine almond flour, baking soda, cinnamon and salt. Stir in date mixture and then add eggs. Mix thoroughly. Fold in walnuts. Batter will be thick. Line an 8×8 baking dish with parchment paper and add batter, spreading into even layer. Bake for 30-35 minutes, until toothpick comes out clean.
