Banana Nut Bread

1 1/2 cups flour

1 tsp baking soda

1/4 tsp salt

3/4 cups chopped pecans

2 Tbs. butter or margarine

1/4 cup salad oil

1 cup sugar

3 mashed bananas

2 eggs, well beaten

3/4 tsp vanilla

 

Sift together first 3 ingredients into a bowl.  Add nuts and toss lightly.  Cream butter, oil, and sugar.  Beat until light and fluffy.  Add next 3 ingredients.  Mix well.  Fold in dry ingredients.  Mix just until blended.  Spoon into 3 small greased loaf pans.  Bake at 300 for 1 hour and 30 minutes.  

 

I have used Jule's Gluten Free Flour in a 1:1 subsitution.
