Peanut Butter M&M cookies

1/2 cup sugar

1/2 cup firmly packed brown sugar

3/4 cups unsalted butter - softened

1/2 cup gluten free peanut butter

1 tsp vanilla

1 egg

1 3/4 cup Thai rice flour

1 tsp baking soda

1/2 tsp salt

1 cup M&M's

 

Mix sugar, brown sugar, butter and peanut butter until light and fluffy.Add the vanilla and egg and blend well.  In a separate small bowl, combine the Thai rice flour, baking soda, and salt.  User a fork to quickly stir and combine these ingredients before adding them to the wet mixture.  Slowly add in the combined dry ingredients and mix well.  Then stir in 1 cup of M&M's until combined.  Bake at 375 for 8-10 minutes.
