Triple Chocolate Cookies

1 3/4 cups all-purpose flour

1/4 cup cocoa

1 3/4 tsp baking powder

1/4 tsp salt

12 oz semisweet chocolate, chopped

1/2 cup unsalted butter at room temp

1 1/4 cups dark brown sugar

1/4 cup sugar

3 eggs

1 1/2 tsp vanilla extract

1 cup semisweet chocolate chips

 

Sift together - flour cocoa powder, baking powder and salt, set aside

Melt chopped chocolate in bowl atop small pot of simmering water.  Stir until melted and smooth.  Remove from heat.

Cream butter and sugars on medium speed until light and fluffy.  Add eggs and vanilla and mix to combine. 

Pour in melted chocolate and continue beating.  Add flour mixture and chocolate chips, half at a time, and mix on low speed until just incorporated.  

refrigerate dough 15-20 minutes or until firm.  Preheat oven to 350 degrees.  Line cookie sheets with parchment paper.

Roll dough into 1 1/2 inch balls and place on cookie sheet about 2 inches apart.  

Bake 8-10 minutes. Cookies will firm once cooled.
