Caramel Corn

2 Cups brown sugar

1/2 lb. butter

1 cup karo syrup (white or dark)

1 tsp vanilla

1/2 tsp baking soda

2 gallon popcorn

1 cup nuts (optional)

 

Mix together sugar, butter, syrup in a large pan.  Bring to a boil and boil 5 minutes. Remove from heat and add soda and vanilla.  Pour over popcorn. 

Bake at 250 for one hour, stirring every 15 minutes.  Pour out on aluminum foil and break apart.
