Gnocchi - Mom's

2 lbs potatoes, cooked

Salt water

2 1/2 cups flour

1/2 tsp salt 

2 eggs yolks

dash nutmeg

 

Mash potatoes.  Add flour, then egg yolks, salt, and nutmeg.  Mix with hands.  Take bits of dough and roll into long rope.  Cut int pieces.  Add to boiling water.  Cook no longer than 3 minutes.  Add sauce and cheese.  Add 1 cup cold water to stop cooking.
